So florets have been done…and done and done some more so now it’s time for Gluten Free Vegetarian Spicy Roast Recipe with Roasted Cauliflower. So how about a cool veggie dish that almost looks like a roast?! Yep a cauliflower roast, if you will! Save the knife for another dish because you won’t be cutting this dish up. Forget florets because you are going to roast the entire cauliflower head in a delicious marinade that will have everyone asking for seconds and wondering when becoming a vegetarian became such a delicious idea!

This Gluten Free Vegetarian Spicy Roast Recipe with Roasted Cauliflower will feed six but in my house, only about 2, lol and this will take about an hour to make start to finish.

You will need the following ingredients for this Gluten Free Vegetarian Spicy Roast Recipe with Roasted Cauliflower:

1 head of cauliflower

1 tbsp. of vegetable oil

1 ½ cups of plain Greek cultured coconut milk (also known as Vegan Greek style yogurt, So Delicious is a good brand).

1 tbsp. of cumin

The juice and zest of 1 lime

2 tsp. curry powder

2 tbsp. of Chile powder

1 tbsp. garlic powder

1 tsp. black pepper

2 tsp. kosher salt

Cooking instructions for your Gluten Free Vegetarian Spicy Roast Recipe with Roasted Cauliflower below:

You will want to start with preheating your oven to 400° and use the vegetable oil to grease a small sized baking sheet.

Then you will need to trim the head of cauliflower. Trim the stem and leafy parts off.

In a medium to large bowl mix all of the yogurt with the lime zest, lime juice, Chile powder, cumin, garlic powder, salt pepper and curry powder.

After you have the above ingredients mixed well, dip the head of cauliflower into the mixture and you can use a brush or your hands to lather the cauliflower with the mixture.

Place cauliflower head on the baking sheet and roast the head until the outside is dry and slightly browned. This will take approximately 30 to 40 minutes. The mixture will cook on to the cauliflower like a thin crust.

Cool the Gluten Free Vegetarian Spicy Roast Recipe with Roasted Cauliflower for about ten minutes before cutting slices.
