Vegan Mushroom Biryani Recipe with Peppers

The vegan mushroom biryani recipe will need the following ingredients:
- Long grain rice, 350 grams
- Vegetable oil, 2 tablespoons
- Sliced closed cup mushrooms, 250 grams
- Onion, finely chopped, 1 whole
- Clove of garlic, crush, 1 whole
- Red pepper, seeds removed, chopped, 1 whole
- Fine green beans, chopped, 125 grams
- Medium curry powder, 1 tablespoon
- Cumin seeds, 1 teaspoon
- Peas, 100 grams
- Chopped fresh coriander to sprinkle on dish at the end
Directions for the vegan mushroom biryani recipe:
In a pan, boil lightly salted water, then add the rice and cook 10 minutes or until rice is tender. While you are cooking the rice, also start heating oil in a large frying pan and gently fry mushrooms, garlic, onion, pepper and green beans for approximately three to five minutes or until soft. Next add the cumin seeds and curry powder and stir for an additional sixty seconds, next add the peas and cook for an additional two minutes, continuously stirring. Next you’ll drain the rice and add it to the large frying pan. Season the dish to taste, stir, and serve. As you serve, sprinkle the top with the fresh chopped coriander.
